RECIPE POMEGRANATE AND CUCUMBER SALAD
Recipe pomegranate and cucumber salad. Today I show you a recipe from Kuwait, a country that has a varied cooking, with influences from Persia and Arabia. This salad’s main protagonist is the pomegranate, a fruit with numerous therapeutic properties, rich in flavonoids that protect against cancer, and antioxidants, that helps our skin to stay young and smooth. Greek yogurt is also rich in lactobacillus and lactic acid, that makes our skin brighter. It’an easy on-the-go recipe, perfect for an aperitif or like appetizer, also served in single portions small bowls. It has few calories and it’s very tasty. I have used only bio ingredients, for a totally natural result.
INGREDIENTS RECIPE POMEGRANATE AND CUCUMBER SALAD (6 SERVINGS):
- 3 cucumbers
- 2 red peppers
- 2 tomatoes
- 1 cup greek yogurt
- 2 pomegranates
- condiment you prefer (oil, salt, pepper, lemon juice, onion and garlic)
- fresh parsley
Cut up cucumbers, red peppers and tomatoes and place them in a dish. Shell the pomegranates and put the seeds in a bowl. Mix cucumber, red peppers and tomatoes bites in an ample bowl and add pomegranates seeds. Add greek yogurt and blend all the ingredients. Mince fresh parsley and blend again. Spice the salad as you like (I only used a few squeezes of lemon) and garnish with some parsley. You can serve your salad immediately or put it in the fridge for few hour.
